Okay, so today I decided to try and make that Cold Stone Pumpkin Pie in the Sky thing at home. I’ve had it at Cold Stone a bunch of times, and it’s always so good, but, you know, it gets pricey. Figured I’d give it a shot myself!

Getting Stuff Ready
First, I needed to gather all the ingredients. I already had some vanilla ice cream in the freezer, so that was a good start. I ran to the store and picked up:
- Pumpkin pie filling (not pumpkin puree, gotta make sure it’s the filling!)
- Graham crackers
- Whipped cream (the kind in the can, makes things easier)
- Caramel sauce (I’m a caramel fanatic, had to have it)
Making the Magic Happen
Alright, so I took the ice cream out of the freezer to let it soften up a bit. You don’t want it rock solid, but you also don’t want it melted. Gotta find that sweet spot, you know?
While the ice cream was softening, I crushed up some graham crackers. I just put them in a Ziploc bag and smashed them with a rolling pin. Felt pretty good, actually. Like a stress reliever!
Once the ice cream was soft enough, I scooped a generous amount into a bowl. Then I added a big spoonful of the pumpkin pie filling. I didn’t measure anything, just went with my gut. I like a lot of pumpkin flavor, so I probably put in more than Cold Stone does, to be honest.
Then, I mixed it all together. This was the tricky part. You gotta mix it enough so the pumpkin filling is evenly distributed, but you don’t want to overmix it and turn the ice cream into soup.
After that, I sprinkled in a bunch of the crushed graham crackers and mixed those in, too.
The Finishing Touches
Now for the best part! I sprayed a generous swirl of whipped cream on top. Then I drizzled caramel sauce all over it. Like I said, I love caramel, so I went a little crazy with it.
Finally, I sprinkled a few more graham cracker crumbs on top for good measure.
And there you have it! My homemade version of Cold Stone’s Pumpkin Pie in the Sky. It might not look exactly like theirs, but man, it tasted amazing. And it was way cheaper! Definitely going to be making this again.
